preparation of items

for 6 Cornish chicken

1 cup = 16 tbsp
1 tbsp = 3 tsp

paste/chop items quantity
Onion1 4 large chop
onion2 4 large paste
ginger1 0.5 tsp
ginger2 1/3 cup
garlic1 0.5 tsp
garlic1 1/3 cup
এলাচি 8pcs
দারচিনি 2 large
তেজপাতা 7 pcs
লবঙ্গ 8 pc
yogurt 0.25 cup
yogurt2 0.25 cup
milk1 0.5 cup
milk2 2 cup
lemon juice 0.5
salt  
sugar 3tpsp
Nuts and kismis paste 4 TBSP
powder items quantity 1 quantity 2
জিরা 1.5 tbsp 4.5 tsp
ধনিয়া 0.5 tbsp 1.5 tsp
chilli 0.5 tbsp 1.5 tsp
এলাচি 2 0.5 tbsp 1.5 tsp
add at last items quantity  
জৈয়ত্রী 0.25 tbsp 0.75 tsp
জয়ফল smash 0.5  

Steps:

do all 3 below steps one after another.

Marination:

  1. mix milk1 and lemon juice and add to chicken
  2. add yogurt to chicken
  3. add এলাচি / দারচিনি/ তেজপাতা/ লবঙ্গ /salt to chicken
  4. keep it for 10 min for marination.

Fry chicken:

  1. fry chicken getting rid of spice with enough oil
  2. fry until light brown.
  3. approx 5 min each side.

make roasts:

  1. mix milk2/yogurt2/ জিরা / ধনিয়া/ chili/এলাচি 2/salt with the left over spice from marination.
  2. start frying chopped onion and chilli from the leftover oil from chicken fry till golden.
  3. add mix from step 1
  4. add onion2 garlic2 ginger2
  5. cook for ~15 min
  6. add ghee 2tbsp
  7. cook for 5 more min
  8. add fried chicken
  9. cook for 5~ 10 min
  10. add nuts paste
  11. add জয়ফল জৈয়ত্রী
  12. cook for long enough to be satisfied with color and smell.
  13. optionally add milk / water / half and half to cook longer
  14. add beresta before it is over
  15. keep it covered after cooking is done fore 5~ 10 min
